I have some pretty old Alpha catalogs, but I really should have done
some more research before I asked this question. It seems that the folks
at Alpha (and probably Belden too) have been busy inventing exactly what
I want:

The data sheet says this is available in as little as 100' spools, so
tomorrow I'll call and see just how expensive this stuff is. Maybe I can
bum a free sample...

Another issue I've been thinking about is the connectors for the motor
and encoder cables. Most traditional controls use Amphenol MS series
circular metal shell connectors which are rather expensive ($20-$30 each
for a plug or receptacle). Some newer machines like Haas and Fadal have
their own rectangular plastic or die cast shell connectors with the
company name molded in. I'll have to dig around and see what's available
now.
