Yes, I think the encoder would be better than a joystick, although it could be slow for very larger moves. But, I guess
you use the jog buttons on the keyboard for that. You could leave the jog speed fairly high, so the keyboard buttons
would get you within 1/2 inch or so, then dial in the exact position. The dial would be MUCH better than the jog buttons
for locating the spindle precisely over a hole, for instance.

Yes, the joystick would be WAY too easy to bump by accident.

Yes, Bertho is right here, the analog rate control of the joystick is a lot better than the on/off of a button.
