I very much doubt that you'd have a noticeable problem with the pulses
from the stepper showing up on the workpiece.
If the table is rack and pinion, the humps are far more likely originating
from the gear teeth.
If, on the other hand, its cable drive, you have the damping effect of the
cable to help you.
Regarding the air cylinder, it will have plenty of poop if it's chosen
wisely, but it will be expensive and noisy.
I'd go stepper only if that's cheaper or easier to install.
Lots of hand grinders have the mounting points for a hydraulic rig already
machined into the castings.
If that's the case, it's just a matter of bolting in the guts.
If that's not the case, then a stepper mount is a viable option in my
opinion.
