No, 2 inch/sec is scarey fast enough for me on a mill, although that
is a good speed to shoot for because slower than that might begin to
bug you after a while.

I can't tell you, I like both! Servos are nice, but with additional
complications... if the extra complication is worth the extra top end
speed to you (and if the servos are not underpowered), then its hard to
go wrong with servos. I just like the steppers, because they are way
simpler, and when they are set up correctly, they'll match the servos
in every which way but top speed.
