You don't need a very high vacuum --here is a simple system for a small wood lathe chuck:

For small vacuum bagging laminating projects a shop vac type works fine. You do need a unit that has separate cooing air over the motor. The simple ones rely on air thoughput through the system to cool the motor which is fine for vacuum cleaners but not for clamping. You will burn the motors out. I think you can find information ( I can but not today) in " Fine Woodworking '"
magazine archives on vacuum clamping. Google "Vacuum clamping" It will not be expensive in normal sizes.. Pumping an aircraft composite structure in an autoclave is another thing.
