Forgive me of this has already been said, but my understanding of the voltage isolation issue is this:
If you compare a classic isolation transformer with a 1:1 turn ratio to a direct connection to the power line, both supply 110 VAC and you can get a shock from either or them.

Because the energy transfer in the transformer is through magnetic
coupling between the two electrically isolated coils the amount of current that the transformer can deliver is limited by the magnetic saturation of the transformer core. A 2 amp isolation transformer will only deliver somewhere in the vicinity of 2 amps. The power line, on the other hand, (or the input side of the isolation transformation for that matter) will deliver as much current as the power company can give you until the circuit breaker activates.

The Variac isn't isolated so you can get a lot more current through it that a regular transformer.

The isolation scenario works with step down transformers,too.
