Rhino 1.1 will unroll a developable surface (ie. no complex curves)
acording to the manual. I haven't tried this yet so I can't comment
further. Amapi 5.15 will also unfold a surface along polygon boundries, you
can specify the number of polygons when you create the surface and you have
some choices about where the cuts go. This one I have used, though I find
Amapi to be an aquired taste. :) There is a 30 day demo version avalible,

These aren't CAD programs but Rhino is the more CAD-like of the two.
