I would prefer a DB-25 out the back to a separate opto-isolated breakout
board with a connectorized terminal strip... or optos in the pc plug-in
board, and DB-25 to a standard breakout board. (most of the DIN terminal
strip makers like Phoenix make DB-25 to terminal strip boards for reasonable
$$)

It is hard to beat the price of a generic parallel port interface card, so
the external buffer/ts board might make the most economic sense. Keeps the
fire out of the box too.

Add some diagnostic LED's while you are at it!
