Here is my rule of thumb:

If it is a new job and untested G-Code then I sit and watch it. I am still
mesmerized by the machine so watching it is not too much of a chore, ;-).

If I have run the code before with no problems then I let it go on its own.
I am usually in the room doing manual finish work on other pieces, but as I
type this the CNC is happily cutting away and I am upstairs in my "clean"
office. At least no titanium chips, except what sticks to my shoes.

My CNCs are Sherlines and they really cannot do too much damage to
themselves. The motors are not strong enough to break too much.
