I'm sure this is not the way for you to do it for your application
but I recently saw some rather interesting ice chucks. I think they
are just beefy peltier heat pumps. I think you spray a little water
on the plate, place your part and turn the thing on, the water then
freezes holding the part. I can think of the odd special job where
this technique might come in. The freezing could be done in the
freezer perhaps.

Cool idea anyway.

Oh, I have seem some companies that sell special rubbery sheet with
lots of holes that I think only open when the part is pressed down.
The material can be cut into. I expect it is not cheap.
