Hi,
Just a comment; there are 68xxx versions of
Linux. I really don't know if you can stuff enough
memory in the older Mac's to make it work. Up
until the ppc came along their memory was pretty
limited. Ppc Mac's i.e. 6000 and up series were
pretty capable machines. Indeed, an analysis of
the instruction set in IEEE publications several
years ago made the 60 MHz ppc about equivalent to
the 166 MHz Alpha. Not too shabby.

Think C is one of the older versions of C for the
Mac but if you can get Linux running then gcc,
make, and all of the other tools should be
available. You may end up programming on a more
loaded machine or even cross compiling for the
68K.
The real problem as I see it with using Macs is
the I/O isn't easy, unless you can find somekind
of interface that will facilitate parallel I/O.
