I myself, also do photographs and carvings, I do not think there is
an inexpensive way to digitize the human head. I have read of software which
can do the job by pointing a table lamp at a person, a video camera at the
person from a different angle, and then passing a pencil across the lamp.
The software generates a 3-d data set from analysing the line of shadow. You
might want to investigate that method for busts. I haven't seen a commercial
of shareware release of such a system though. Someone here might have and
can point the way for you.
