How about projecting a grid at the profile, and photographing head-on,
so to speak. This would give you vertical and horizontal waterlines.
Obviously, there would be shadows between the eye and nose, but you might be able to change the angle and do some (ok, a lot) of math. Another possibility
might be to project from the front, and 60 from degrees to the left and right.
Use three different colors, and put an index dot on each projected grid, if it would help in correlating the data.

Last idea, use a cylinder as a test or calibration subject, and then figure the offsets between the two images.
