The theory is to connect the thing physically to the device you want
to monitor.. Allow a PC or something else to periodically read the
values and store them, then take that data and graph it. You can get
standalone stuff, or you can use a PC...

If you can write a program, you can also do that, if you have good
access to the channel...

You could also take a joystick connector, connect it to your pc, put a
thermistor in place of one of the joysticks, run some calibration
curves, and then write a basic program to get some rough values....
