having worked in sheet plastics, the trick is to not cut all the way through the paper layer on the acrylic. It is about .001 thick, and by ofsetting up that far, you can just cut the part out with a stanley knife. We used MDF over the vacum chamber, and covered the excess of the table with sheet plastic.

Look at the cut path. if you can cut in such a manner as to have a
section done, you can then lay a plastic sheet over that area.

the biggest problem is that the cut area is an open window. at some
point, there is no vacuum that will work.

Considder that a 1/4 inch cutter on a 12" line has an open area of 3
square inches. that is like a 2 in open pipe. you could not afford
to run a pump that could maintain a vacuume on such an opening.

The better method is to make a sacrifical part with large spaces
under the non-cut areas. Then the cut lines are not open to the
vacuume.
