These drives keep rolling around on my wonder-how-it-works list.

A question I have is comparing any of these to servos.

Looking at Freds $65/3axis for servo drivers, plus $50 for 3 encoders
from SurplusCenter, you're in for around $250 for servo drives.

But, you're also into (possibly) cheaper motors. The old line
printers used to have 35 volt motors, but I don't know a source of
cheap lower voltage motors that fit.

Finding 5 amp motors that are in the 30volt range is hard, but it
seems the power would be dang high if you could.
