Here's information on the services in XP:
http://www.beemerworld.com/tips/servicesxp.htm
I develop software for a living. In almost all cases at the client sites
I've been to, XP runs quicker than 2k on similar hardware. That's my
personal experience.

2K is a simpler OS than XP, as others have mentioned, it's has fewer
services and shutting these down has fewer undesired effects. It appears to
take longer to boot than XP, but that's just show.
2K will run faster on the same hardware (particularly if it's light on RAM)
than XP. I run Mach on 2K.
