Any mechanical mouse with a ball should have a pair of
quadrature encoders. A wheel with a ring of holes in it and a
pair of optical sensors with the right spacing to get the 90
degree phase shift.

Yes, because they have to detect motion in both directions, they
HAVE to be quadrature, but usually use two tiny sensors and one
light emitter, as the cheapest, most compact way to do it.
