Carlos,

I don't know that I'd want a joystick interface. To me, the possibility
of accidentally jogging the wrong axis in tight quarters would outweigh
any benefits.
Perhaps two separate sticks for X and Y, or making it switch
selectable...
I've used a pulse generator handwheel on a commercial CNC mill, and it's
really the best interface for general movement, and coupled with
incremental jogs in selectable resolutions (1.0, .100, .010 etc.) is
really the hot setup.
