With EMC, there is an acceleration parameter in the .ini file that
is usually set to near the maximum for the motion system, but
leaves enough reserve so the steppers don't stall or the
servos don't trip.

Then, in the G-code, you have a choice of continuous contouring
or exact stop mode, which assures that every move has completed
to the endpoint before the next move is begun.
