If you go to the files section of this group, then go to Files >
CIRCUITS > Pulse Gen and Timing Circuits> analogue output encoder
interface.pdf
Its based on 1v peak to peak. As you can see it would produce three
outputs chanel A and B which are square wave quadrature (if you use
these you will loose resolution but might be ok for your purpose)
and a third analogue output which produces a linear ramp voltage
which is proportional to the interpolated position between the
sin/cos peaks ie lines on your encoder.
I started to build this but then had access to a cheap TTL based
encoder so did not complete it. I did find in the scrap (no manual
or pin outs) a proper (megabucks) interpolator. From an analysis of
the pcb it did look like it converted everything to digital via AtoD
converters.
If you really need to solve this you could try
www.solartronmetrology.com and look at their IBOX sine wave to
quadrature converter. Dont know the cost or the inputs and outputs.
