It depends on your software and preferences.

In metric I use .01mm per click, in inches .001.

In that mode it's an incremental jogger and moves only as far as the
number of clicks you've moved the wheel.

In Mach3, there are three modes, one as above, Velocity mode where the
faster you turn, the faster the table moves, and a third which is a
combination of the above two. The last one moves a set distance per
click until you get to a user pre set speed then it goes into velocity
mode.
