To be honest I would go for something like 0.2 - 0.4" per rev. Unless
your gantry is very heavy it should still have a very high acceleration.

As well as the emergency brake that Ron recommends, I would rig up a
simple circuit that dumps a low value high power resistor across the
motor terminals when the power is disconnected from the drives. This
will stop the gantry pretty quickly. As an extra precaution it will be
worth fitting rubber buffers as end stops.

I though my plasma was reasonably quick using little NEMA32 steppers.
Yours is going to be ballistic!
