I took a tour of Amish country and this is the way that it was
explained to me;
The Amish object to a connection to the outside world. Thus,
no electricity or phone. Those are connected by a wire to the
"English" (their term for outsiders). They cannot use generators
because they require gas which comes from the outside. This
describes their home life.
Business is a different story. Long ago they continued farming
using horses to pull their plows even after farm
tractors became common. At some point they could not successfully
farm with horses no matter how hard working they were.
At that point they decided that the prohibition against modern
technology would not apply to business. Now their farms are
as modern as anyone else's. Their machine shops use all modern
equipment. When they close the door and go home they use
candles for light and pump their water by hand.
