This particular problem may not be in the OS or software drivers
provided for the OS, but in the hardware design (or perhaps a specific
vendors hardware or driver implementation) that lets video performance
under some conditions affect realtime performance. If it's a hardware
issue any OS, realtime or not, would suffer.

The problem I have with using an OS other than DOS or Windows is that
they cost me either more time to learn and set up and/or more money to
obtain. They will also be less well-known or less user-friendly so
finding support and fixing problems will cost me more time or money. As
a hobbiest I have, at most, a few hours and a handful of dollars a week
to commit to making parts, so resources spent on support tools has a
large impact on my productivity.

DOS and Windows are easily 'Good Enough' for me. If I need better
hardware performance I'll buy a GREX and let the realtime processing be
handled where it ought to be, in dedicated hardware, with a nice GUI on
Windows.

Others may have different requriements and prefrences of course.
