I think that each V groove bearing running on a corner of square stock, will
give control in two directions at the same time, and two bearings on
opposite sides will give control in all four directions. You will want bearings
that don't have any sideways backlash. Also be sure that the V groove does not
bottom on the very edge of the square stock, you will want a few thousands of
an inch clearance there.
You can also rotate the square stock so the inside edge and its bearing is
lower, so it would clear the moving table, still giving you control, but a
narrower machine.
