I looked quite deeply into using optical mice sensors for this sort of
thing as well as using a pair for real 2D measurement however the way
they work means that the speed of scan and surface texture change the
results.

This is not just a function of acceleration software/hardware but
rather the way they work, they are estimators. The DPI ratings do not
mean they will be accurate to that accuracy but rather they give an
idea of how many value changes you get per inch on average.

Optical mouse sensors are great for user input but not accurate
position or length measurement.
