It is sucked into the stream by the rapidly moving water. Even without
abrasives, and with deionizers at the minimum, the primary orifice gets
worn out pretty fast.

Most of the nozzle is expendable, and has to be replaced periodically.

Yeah, but especially abrasive waterjet produces a HUGE amount of soggy
debris. I suspect even pure waterjet used on soft materials is going to
produce a lot of waterlogged muck that has to be dealt with.
