For jewlers I guess it's because gold and platinum swarf is pretty expensive.
For non jewlers it is a prototype thing. Several reasons:
1. Test and de-bug complicated programs without crashing a tool, or scrapping expensive blanks
2. Test how the part will pour and cool (sink, porisity etc.) before you build a tool
3. Experiemtent with gates and runners, same reason as above
4. You have a little bitty machine that cuts wax faster and easier than stainless steel
5. Po man's rapid prototype

Just a fr' instance, I'm sure others have other reasons.
