All the schematics and code are available, you just need to know where to
look. Ask in the IRC channel for quick help. The one de facto exception to
that would be the new Makerbot extruder, which is custome manufactured, so
while they may call it open source it is not practical to build your own
(from my understanding at least). If you want a good, open source extruder,
I strongly recommend the Makergear. The Wade's is even easier to DIY, but
the hobbed bolt does not perform as well as the Makergear does.
